Enjoy amazing Spanish cuisine at La Casita De Boudhanath, a homely cosy restaurant in the premises of the Boudhanath Stupa.

After eating dal bhat for days, I was in the mood to try something different and so ended up in La Casita De Boudhanath, a cosy restaurant in the premises of the Boudhanath Stupa that serves Spanish cuisine.

The day was hot and after taking one round of Boudhanath Stupa, I was sweaty, so you do not know how happy I was when they served me a jug full of water with mint and lemon. After enjoying the chilled water, we decided to order two tapas, a main dish, and one dessert.

We started with a three layered special Spanish omelet and croquettes. This is a very popular dish in Spain I was told. True to its name it had three layers, with the base made out of potato followed by spinach and the omelette on top. It was as good as its reputation.

Santosh Timalsina the manager said, “When you eat the Spanish omelet, you have to eat it with a salad otherwise it is incomplete.” So keeping the suggestion in mind, I had to follow the tradition and try it.

The omelette was well balanced and was not overpowered by the flavors of spinach and potato, and biting into the salad, you could taste the strong flavors of the fresh veggies.

Timalsina also informed, “Here in La Casita, we try to focus on the quantity and quality of food. So we use healthy and organic vegetables that are from the farmers market at Le Sherpa.”

Next I tried their croquettes, a small cylinder shaped fried snack with a delicious filling inside. Head chef, Shrijana Lama who has been working here for 5 years and running the place, said, “There are a variety of items that make the filling for the croquettes. They include spinach, mushroom, chicken and also seafood. After we make the fillings, we dip it in eggs and bread crumbs and deep fry it till it is golden brown.” She added, ‘the special ingredient in it is béchamel sauce made from white roux and milk.

Finally we were served the main dish, Chicken Paella.

Paella which means frying pan is one of the best-known dishes in Spanish cuisine made out of rice, bouquet, and chicken. Lama explained, “To make paella we first make the stock, and then add grilled chicken and vegetables. For the color we use saffron, and we cook the stock for 10 to 15 minutes. And after adding the rice, we slow cook the dish for about 45 minutes.”

When the dish was served in the big pan, the bright color of the dish was very appealing to the eye. It was garnished and decorated with parsley and lemons and well-seasoned with rosemary.

In every bite of the dish, one can get a piece of chicken, rice and the amazing fresh flavours of the vegetables with rosemary. Ghimire also explained, “Since paella is slow cooked, the middle part of the bottom of the dish is always charred.”

I ended the meal with their popular dessert, Churros served with hot chocolate dipping sauce. Churro is fried dough which can be made in different shapes topped with powdered sugar.

As I bit into the churro dipped in the hot cocoa, it was crunchy on the outside and gooey on the inside. A wonderful dessert and the dipping sauce was so good, that I could not help take a spoonful of it even after the churros were finished.
